Oatmeal, apple and carrots

🥣 Mediterranean Oatmeal–Apple–Carrot Bake (No Sugar, No Flour)

Soft, naturally sweet, fiber-rich, and perfect for breakfast or a healthy snack.


🛒 Ingredients (Serves 2–3)

Base ingredients (required):

  • 1 cup rolled oats

  • 1 large apple, grated

  • 1 medium carrot, grated

Moisture & binding:

  • 1 egg (or 2 tbsp olive oil for vegan)

  • ½ cup milk (or almond milk)

Mediterranean flavors (recommended):

  • 1 tbsp extra-virgin olive oil

  • ½ tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • ½ tsp vanilla extract (optional)

  • Pinch of sea salt

  • 1–2 tbsp raisins (optional, natural sweetness)

  • 1–2 tbsp chopped nuts (walnuts/almonds; optional)


🍳 Instructions

1. Prep the fruits & vegetables

  • Peel the apple only if you want a softer bake (peel optional).

  • Grate the apple and carrot.

  • Squeeze lightly to remove excess water (keeps the bake firm).


2. Mix the batter

In a bowl combine:

  • oats

  • grated apple

  • grated carrot

  • egg (or olive oil)

  • milk

  • cinnamon, nutmeg, salt

  • (optional) raisins & nuts

Mix until oats are fully moistened.

Let rest 5 minutes so oats absorb liquid.


3. Bake

  • Preheat oven to 180°C (350°F).

  • Pour mixture into a small baking dish or muffin tin.

  • Bake 22–28 minutes until firm, lightly golden, and set.


4. Cool & Serve

Slice or scoop.
Serve warm or chilled. Perfect on its own — naturally sweet from apple + carrot.


🌿 Mediterranean Add-Ons (optional, no sugar)

  • A drizzle of extra-virgin olive oil on top

  • A spoon of Greek yogurt

  • Add orange zest or lemon zest to the batter

  • Add ground walnuts for more Mediterranean richness


⚡ Quick Variations

No-Bake Version

Mix all ingredients + 2 tbsp olive oil → press into a small container → refrigerate 2 hours.

Stovetop Version

Cook oats with milk → stir in grated apple + carrot → simmer until creamy → add cinnamon + olive oil.
