🧺 Ingredients (Serves 6–8)

  • 2 cups (200 g) rolled oats, chopped in a blender

  • 1 teaspoon baking powder

  • 1 cup (240 ml) milk of your choice (dairy or plant-based)

  • 1 medium carrot, finely grated

  • 1 apple, finely grated (sweet variety works best)

  • 9 dried apricots, rinsed with hot water & chopped

  • 4 tablespoons raisins, rinsed with hot water

Optional Mediterranean Enhancers (Still No Sugar)

  • ½ tsp cinnamon

  • ¼ tsp ground cardamom or nutmeg

  • 1 tbsp olive oil (for extra moisture)

  • Chopped walnuts or almonds on top


🔥 Instructions

  1. Preheat oven
    Set oven to 180°C (350°F). Lightly grease an 8×8 inch baking dish.

  2. Mix dry ingredients
    In a bowl, combine blended oats and baking powder.

  3. Add wet ingredients
    Stir in milk, grated carrot, grated apple, apricots, and raisins. Mix until well combined.
