🍗🥔 One-Pan Garlic Herb Chicken with Potatoes & Green Beans

✅ Ingredients

  • 4 chicken thighs or breasts (bone-in or boneless)

  • 500 g (1 lb) baby potatoes, halved

  • 200 g (7 oz) green beans, trimmed

  • 4 tablespoons olive oil

  • 4 cloves garlic, minced

  • Juice of 1 lemon

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme or rosemary

  • ½ teaspoon paprika

  • Salt & black pepper, to taste


👩‍🍳 Instructions

  1. Preheat Oven
    Preheat to 200°C (400°F). Line a large baking tray.

  2. Season Chicken
    In a bowl, mix olive oil, garlic, lemon juice, oregano, thyme, paprika, salt, and pepper.
    Rub half the mixture over the chicken.

  3. Prepare Vegetables
    Toss potatoes with the remaining marinade.
    Spread on the tray and roast 15 minutes.

  4. Add Chicken & Beans
    Push potatoes aside, add chicken to the tray.
    Roast 20 minutes, then add green beans, lightly tossing them in pan juices.

  5. Finish Baking
    Roast another 10–15 minutes until chicken is golden and cooked through.

  6. Serve
    Rest 5 minutes. Finish with fresh herbs or extra lemon.


🌿 Mediterranean Tips

  • Add cherry tomatoes or olives in the last 10 minutes

  • Sprinkle with feta before serving

  • Serve with tzatziki or yogurt sauce
