🍗🥔 One-Pan Garlic Herb Chicken with Potatoes & Green Beans
✅ Ingredients

4 chicken thighs or breasts (bone-in or boneless)

500 g (1 lb) baby potatoes, halved

200 g (7 oz) green beans, trimmed

4 tablespoons olive oil
-
4 cloves garlic, minced
-
Juice of 1 lemon
-
1 teaspoon dried oregano
-
1 teaspoon dried thyme or rosemary
-
½ teaspoon paprika
-
Salt & black pepper, to taste
👩🍳 Instructions

Preheat Oven
Preheat to 200°C (400°F). Line a large baking tray. -
Season Chicken
In a bowl, mix olive oil, garlic, lemon juice, oregano, thyme, paprika, salt, and pepper.
Rub half the mixture over the chicken. -
Prepare Vegetables
Toss potatoes with the remaining marinade.
Spread on the tray and roast 15 minutes. -
Add Chicken & Beans
Push potatoes aside, add chicken to the tray.
Roast 20 minutes, then add green beans, lightly tossing them in pan juices. -
Finish Baking
Roast another 10–15 minutes until chicken is golden and cooked through. -
Serve
Rest 5 minutes. Finish with fresh herbs or extra lemon.
