🌶️ One-Pan Spicy Shrimp Orzo with Burrata

Ingredients:

  • 2 tbsp olive oil

  • 1 lb (450 g) large shrimp, peeled & deveined

  • 1 tsp smoked paprika

  • 1 tsp chili flakes (adjust to taste)

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup orzo pasta

  • 1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)

  • 2 ½ cups chicken or vegetable broth

  • 1 tsp dried oregano

  • 1 tsp salt (to taste)

  • ½ tsp black pepper

  • 2 cups baby spinach (or arugula)

  • 1 ball burrata cheese (about 4 oz)

  • Fresh basil or parsley, chopped (for garnish)

  • Zest of 1 lemon + juice for brightness


Instructions:

  1. Season the shrimp

    • In a bowl, toss shrimp with smoked paprika, chili flakes, salt, and pepper. Set aside.

  2. Sauté aromatics

    • Heat olive oil in a large skillet or sauté pan.

    • Add onion and cook 3 minutes until softened.

    • Stir in garlic and orzo; toast 2 minutes until lightly golden.

  3. Build the sauce

    • Add diced tomatoes, oregano, salt, and pepper.

    • Pour in broth, stir, and bring to a boil.

    • Reduce to a simmer, cover, and cook 8–10 minutes until orzo is al dente.

  4. Cook the shrimp

    • Nestle shrimp into the orzo mixture.

    • Cook 3–4 minutes per side until shrimp are pink and cooked through.

  5. Finish with greens

    • Stir in spinach until wilted.

    • Adjust seasoning with lemon zest & juice.

  6. Serve

    • Transfer to plates or serve family-style.

    • Place burrata on top, letting it melt slightly into the hot orzo.

    • Garnish with fresh basil or parsley.


✅ Tips:

  • For extra spice, add a drizzle of chili oil before serving.

  • If you don’t have burrata, use fresh mozzarella or a dollop of ricotta.

  • Pairs perfectly with crusty bread or a light green salad.
