Parmesan Crusted Chicken
Ingredients:
- 2 boneless, skinless chicken breasts, butterflied into 2 or 3 pieces
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (such as basil, oregano, thyme)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
Instructions:
- Prepare the Chicken:
- Butterfly each chicken breast into 2 or 3 pieces, depending on the size.
- Place the chicken between plastic wrap and gently pound them to an even thickness.
- Season both sides with garlic powder, dried herbs, salt, and pepper.
- Coat with Parmesan:
- Coat one side of each chicken piece with grated Parmesan cheese, pressing it onto the chicken to adhere.
- Cooking:
- Heat olive oil in a skillet over medium-high heat.
- Place the chicken in the skillet, Parmesan side down, and cook until it forms a golden crust (approximately 3-4 minutes).
- Flip the chicken, reduce the heat to medium, and add butter to the skillet.
- Continue cooking until the chicken is cooked through, and the internal temperature reaches 165°F (74°C).
- Serve:
- Transfer the chicken to a plate, allowing it to rest for a few minutes before serving.
