1½ lb beef sirloin or flank steak, thinly sliced

2 tbsp extra-virgin olive oil

1 large onion, thinly sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

1 cup mushrooms, sliced

3 garlic cloves, minced

1 tsp dried oregano

½ tsp dried thyme

Salt & black pepper, to taste

1 tbsp Worcestershire sauce

½ cup beef broth
-
1 cup shredded provolone cheese
-
½ cup shredded mozzarella cheese

Optional Mediterranean add-ins: sliced Kalamata olives or roasted red peppers

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear steak quickly until just browned. Remove and set aside.

Add remaining olive oil to the skillet. Sauté onions, bell peppers, and mushrooms until soft and lightly caramelized.

Stir in garlic, oregano, thyme, salt, and pepper; cook 30 seconds.

Add Worcestershire sauce and beef broth, simmer 2–3 minutes.

Return steak to skillet and toss to coat.

Transfer mixture to prepared baking dish. Sprinkle with provolone and mozzarella. Add olives or roasted peppers if using.

Bake 20–25 minutes, until cheese is melted and bubbly.

Broil 2–3 minutes for a golden top if desired. Rest 5 minutes before serving.
