Puff Pastry Spinach Christmas Trees (Mediterranean Style)
🧾 Ingredients

2 sheets puff pastry, thawed

1½ cups fresh spinach, finely chopped

½ cup feta cheese, crumbled

¼ cup ricotta cheese

1 clove garlic, minced

1 tbsp extra-virgin olive oil

½ tsp dried oregano

¼ tsp nutmeg (optional)

Salt & black pepper, to taste

1 egg, beaten (for egg wash)

Sesame seeds or pine nuts (for garnish)
🎄 Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

Heat olive oil in a skillet over medium heat. Add garlic and sauté briefly.

Add spinach and cook just until wilted. Remove from heat and let cool slightly. Squeeze out excess moisture.

In a bowl, mix spinach with feta, ricotta, oregano, nutmeg, salt, and pepper.

Roll out puff pastry sheets. Spread the spinach mixture evenly over one sheet. Place the second sheet on top.

Cut into long triangles (tree shapes) or strips and shape into Christmas trees.

Transfer to baking sheet. Brush with egg wash and sprinkle with seeds or nuts.

Bake for 18–22 minutes, until puffed and golden brown.
