🥧 Ricotta Spinach Quiche Delight (Mediterranean Style)

Ingredients (Serves 6)

For the Crust (Optional)

Use your preferred crust or go crustless (Mediterranean lighter option).

  • 1 unbaked pie crust OR skip for low-carb version


For the Filling

  • 1 cup ricotta cheese

  • 1 cup fresh spinach, chopped (or ¾ cup frozen, thawed & squeezed dry)

  • 4 large eggs

  • ½ cup milk (or ¼ cup milk + ¼ cup cream for richer texture)

  • ½ cup feta cheese, crumbled

  • ½ small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp extra-virgin olive oil

  • ¼ tsp sea salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano

  • ¼ tsp paprika

  • Optional: pinch of nutmeg

  • Optional: cherry tomatoes for topping

  • Optional: chopped parsley for garnish


👨‍🍳 Instructions

1. Prepare the Oven & Crust

  1. Preheat oven to 375°F (190°C).

  2. If using a crust, place it into a pie dish and pre-bake 8 minutes.


2. Sauté the Aromatics

  1. Heat olive oil in a pan over medium heat.

  2. Add onion and cook until soft (3–4 minutes).

  3. Add garlic and spinach, cooking until wilted.

  4. Remove from heat and cool slightly.


3. Make the Filling

Whisk together:

  • Eggs

  • Milk

  • Ricotta

  • Feta

  • Salt, pepper, oregano, paprika, nutmeg (if using)

Fold in the spinach-onion mixture.


4. Assemble & Bake

  1. Pour the mixture into the crust or directly into a greased pie dish.

  2. Add halved cherry tomatoes on top if you like.

  3. Bake 35–40 minutes, until the center is just set and lightly golden.

  4. Cool 10 minutes before slicing.


🍽️ Serving Suggestions (Mediterranean Style)

  • Serve with a cucumber-tomato salad

  • Pair with olives + hummus plate

  • Add roasted vegetables on the side

  • Drizzle with a little olive oil before serving
