For the Crust (Optional)
Use your preferred crust or go crustless (Mediterranean lighter option).

1 unbaked pie crust OR skip for low-carb version
For the Filling

1 cup ricotta cheese

1 cup fresh spinach, chopped (or ¾ cup frozen, thawed & squeezed dry)

4 large eggs
-
½ cup milk (or ¼ cup milk + ¼ cup cream for richer texture)

½ cup feta cheese, crumbled
-
½ small onion, finely chopped
-
2 cloves garlic, minced
-
2 tbsp extra-virgin olive oil
-
¼ tsp sea salt
-
¼ tsp black pepper
-
½ tsp dried oregano
-
¼ tsp paprika
-
Optional: pinch of nutmeg

Optional: cherry tomatoes for topping

Optional: chopped parsley for garnish
👨🍳 Instructions
1. Prepare the Oven & Crust

Preheat oven to 375°F (190°C).

If using a crust, place it into a pie dish and pre-bake 8 minutes.
2. Sauté the Aromatics

Heat olive oil in a pan over medium heat.

Add onion and cook until soft (3–4 minutes).
-
Add garlic and spinach, cooking until wilted.

Remove from heat and cool slightly.
3. Make the Filling
Whisk together:

Eggs

Milk
-
Ricotta
-
Feta
-
Salt, pepper, oregano, paprika, nutmeg (if using)
Fold in the spinach-onion mixture.
4. Assemble & Bake

Pour the mixture into the crust or directly into a greased pie dish.

Add halved cherry tomatoes on top if you like.

Bake 35–40 minutes, until the center is just set and lightly golden.

Cool 10 minutes before slicing.
