🍠 Mediterranean Roasted Sweet Potato with Honey & Feta

Perfect as a side dish or light vegetarian main. Warm roasted sweet potatoes are drizzled with honey, sprinkled with creamy feta, and brightened with fresh herbs and olive oil.
🧾 Ingredients (serves 3–4)
For the roasted sweet potatoes

2 large sweet potatoes, cut into cubes or wedges

2–3 tbsp extra-virgin olive oil

½ tsp salt

½ tsp black pepper

1 tsp smoked paprika or sweet paprika

½ tsp cumin
-
½ tsp dried oregano
For the topping
-
3–4 tbsp crumbled feta
-
1–2 tbsp honey
-
1 tbsp lemon juice (optional but adds Mediterranean brightness)

1 tbsp olive oil (for finishing)

2 tbsp chopped parsley or mint
-
Optional: chili flakes or Aleppo pepper

Optional: toasted walnuts or pine nuts
🍳 Instructions
1. Prepare the sweet potatoes

Preheat oven to 425°F (220°C).

Toss sweet potato cubes with olive oil, salt, pepper, paprika, cumin, and oregano.

Spread on a baking tray in a single layer.
2. Roast
Roast for 25–30 minutes, flipping halfway, until the edges are caramelized and lightly crisp.
3. Finish with toppings
Once hot out of the oven:

Drizzle with honey.

Sprinkle generously with feta.

Add chopped parsley or mint.

Drizzle a little extra olive oil and lemon juice.
