🍠 Mediterranean Roasted Sweet Potato with Honey & Feta

⭐ Overview

Perfect as a side dish or light vegetarian main. Warm roasted sweet potatoes are drizzled with honey, sprinkled with creamy feta, and brightened with fresh herbs and olive oil.


🧾 Ingredients (serves 3–4)

For the roasted sweet potatoes

  • 2 large sweet potatoes, cut into cubes or wedges

  • 2–3 tbsp extra-virgin olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp smoked paprika or sweet paprika

  • ½ tsp cumin

  • ½ tsp dried oregano

For the topping

  • 3–4 tbsp crumbled feta

  • 1–2 tbsp honey

  • 1 tbsp lemon juice (optional but adds Mediterranean brightness)

  • 1 tbsp olive oil (for finishing)

  • 2 tbsp chopped parsley or mint

  • Optional: chili flakes or Aleppo pepper

  • Optional: toasted walnuts or pine nuts


🍳 Instructions

1. Prepare the sweet potatoes

  1. Preheat oven to 425°F (220°C).

  2. Toss sweet potato cubes with olive oil, salt, pepper, paprika, cumin, and oregano.

  3. Spread on a baking tray in a single layer.

2. Roast

Roast for 25–30 minutes, flipping halfway, until the edges are caramelized and lightly crisp.


3. Finish with toppings

Once hot out of the oven:

  1. Drizzle with honey.

  2. Sprinkle generously with feta.

  3. Add chopped parsley or mint.

  4. Drizzle a little extra olive oil and lemon juice.

  5. Add chili flakes for a mild heat (optional).


🍽️ To Serve

  • Pair with grilled chicken, salmon, or falafel.

  • Serve over arugula with olives for a Mediterranean warm salad.

  • Add chickpeas to turn it into a hearty vegetarian bowl.


🔄 Variations

  • Add tahini drizzle for a Middle Eastern twist.

  • Use rosemary or thyme instead of oregano.

  • Swap feta for goat cheese if you want a creamier finish.
