🍠 Roasted Sweet Potatoes with Honey & Feta (Mediterranean Style)

Ingredients

For the Roasted Sweet Potatoes

  • 2 large sweet potatoes, peeled and cubed

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp cinnamon (optional for warmth)

  • ½ tsp garlic powder

  • Salt & black pepper to taste

For the Topping

  • 3–4 tbsp crumbled feta cheese

  • 1½ tbsp honey (more if you like it sweeter)

  • 2 tbsp roasted walnuts or pecans (optional)

  • 1 tbsp fresh parsley, chopped

  • Optional: drizzle of balsamic glaze for extra Mediterranean flavor


🧑‍🍳 Instructions

1. Prepare the Sweet Potatoes

  1. Preheat oven to 220°C (425°F).

  2. Toss cubed sweet potatoes with olive oil, paprika, cumin, cinnamon, garlic powder, salt, and pepper.

  3. Spread evenly on a baking tray lined with parchment.


2. Roast

  • Roast for 25–30 minutes, flipping halfway.

  • Cook until edges are caramelized and golden.


3. Add Mediterranean Toppings

Once hot out of the oven, top with:

  • Feta cheese

  • Honey drizzle

  • Walnuts or pecans (adds crunch)

  • Chopped parsley

  • Optional balsamic glaze for extra richness

The heat melts the feta slightly and blends beautifully with the honey.

  • Serve as a warm side dish with grilled chicken or salmon

  • Add to a Mediterranean grain bowl (quinoa, couscous, farro)
