🧀 Savory Reuben Bake (Mediterranean Twist)

🧾 Ingredients

  • 2 cups cooked corned beef or pastrami, chopped

  • 1½ cups sauerkraut, drained & lightly rinsed

  • 1½ cups Swiss cheese, shredded

  • ½ cup Greek yogurt (or labneh)

  • ¼ cup olive-oil mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp smoked paprika

  • Black pepper, to taste

Topping

  • 1 cup whole-grain breadcrumbs or crushed rye crackers

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp fresh parsley or dill, chopped


👩‍🍳 Instructions

  1. Preheat Oven

    • Preheat to 375°F (190°C).

    • Lightly grease an 8×8-inch baking dish with olive oil.

  2. Make the Creamy Base

    • In a bowl, mix Greek yogurt, olive-oil mayo, Dijon mustard, lemon juice, garlic powder, oregano, paprika, and black pepper.

  3. Assemble the Bake

    • Spread corned beef evenly in the dish.

    • Layer sauerkraut on top.

    • Pour the creamy mixture evenly over the layers.

    • Sprinkle Swiss cheese over everything.

  4. Prepare the Topping

    • Toss breadcrumbs with olive oil and parsley.

    • Sprinkle evenly over the cheese.

  5. Bake

    • Bake uncovered for 30–35 minutes, until bubbly and golden.

    • Rest 5–10 minutes before serving.
