Ingredients:

  • 1 bag (16 oz) Great Value peppers & onions blend (frozen or fresh)
  • 1 bag (10 oz) cauliflower rice
  • 12 large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 5 tablespoons shredded Parmesan cheese
  • Salt and pepper to taste
  • Optional: fresh herbs (such as parsley or basil) for garnish

Instructions:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the shrimp to the skillet and season with salt and pepper to taste. Sauté the shrimp until they are pink and cooked through, about 2-3 minutes per side. Remove from the skillet and set aside.
  • In the same skillet, add the Great Value peppers & onions blend and cauliflower rice. Cook, stirring occasionally, until the vegetables are tender and the cauliflower rice is heated through, about 5-7 minutes.
  • Return the cooked shrimp to the skillet with the cauliflower rice mixture. Stir to combine.
  • Sprinkle the shredded Parmesan cheese over the shrimp and cauliflower rice mixture. Continue cooking for an additional 1-2 minutes, or until the cheese is melted and bubbly.
  • Remove from heat and transfer the shrimp and cauliflower rice mixture to serving plates.
  • Garnish with fresh herbs, if desired.
