Ingredients:

1 bag (16 oz) Great Value peppers & onions blend (frozen or fresh)

1 bag (10 oz) cauliflower rice

12 large shrimp, peeled and deveined

1 tablespoon olive oil

5 tablespoons shredded Parmesan cheese

Salt and pepper to taste

Optional: fresh herbs (such as parsley or basil) for garnish
Instructions:

Heat olive oil in a large skillet over medium-high heat.

Add the shrimp to the skillet and season with salt and pepper to taste. Sauté the shrimp until they are pink and cooked through, about 2-3 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the Great Value peppers & onions blend and cauliflower rice. Cook, stirring occasionally, until the vegetables are tender and the cauliflower rice is heated through, about 5-7 minutes.

Return the cooked shrimp to the skillet with the cauliflower rice mixture. Stir to combine.

Sprinkle the shredded Parmesan cheese over the shrimp and cauliflower rice mixture. Continue cooking for an additional 1-2 minutes, or until the cheese is melted and bubbly.

Remove from heat and transfer the shrimp and cauliflower rice mixture to serving plates.
