🦐🥑 Mediterranean Shrimp Stuffed Avocados
✅ Ingredients

2 ripe avocados, halved and pitted

250 g (½ lb) shrimp, peeled & deveined

1 tablespoon olive oil

2 tablespoons Greek yogurt or light mayo

1 tablespoon lemon juice

1 small garlic clove, minced

2 tablespoons red onion, finely chopped

2 tablespoons fresh parsley or dill, chopped

Salt & black pepper, to taste

Optional: pinch of paprika or chili flakes
👩🍳 Instructions

Cook Shrimp
Heat olive oil in a pan over medium heat.
Add shrimp, garlic, salt, pepper, and paprika.
Cook 2–3 minutes per side until pink.
Let cool, then chop. -
Prepare Filling
In a bowl, mix chopped shrimp, Greek yogurt, lemon juice, onion, and herbs. -
Assemble
Scoop a little flesh from the avocados to make space.
Fill generously with the shrimp mixture. -
Finish
Drizzle with olive oil and a squeeze of lemon.
