Shrimp Stuffed Avocados

🦐🥑 Mediterranean Shrimp Stuffed Avocados

✅ Ingredients

  • 2 ripe avocados, halved and pitted

  • 250 g (½ lb) shrimp, peeled & deveined

  • 1 tablespoon olive oil

  • 2 tablespoons Greek yogurt or light mayo

  • 1 tablespoon lemon juice

  • 1 small garlic clove, minced

  • 2 tablespoons red onion, finely chopped

  • 2 tablespoons fresh parsley or dill, chopped

  • Salt & black pepper, to taste

  • Optional: pinch of paprika or chili flakes


👩‍🍳 Instructions

  1. Cook Shrimp
    Heat olive oil in a pan over medium heat.
    Add shrimp, garlic, salt, pepper, and paprika.
    Cook 2–3 minutes per side until pink.
    Let cool, then chop.

  2. Prepare Filling
    In a bowl, mix chopped shrimp, Greek yogurt, lemon juice, onion, and herbs.

  3. Assemble
    Scoop a little flesh from the avocados to make space.
    Fill generously with the shrimp mixture.

  4. Finish
    Drizzle with olive oil and a squeeze of lemon.


🌿 Mediterranean Tips

  • Add cucumber or cherry tomatoes for crunch

  • Sprinkle with feta cheese if desired

  • Serve with whole-grain pita or enjoy on its own
