🥔 Simple Mediterranean Sheet-Pan Scored Potatoes

✅ Ingredients

  • 4–6 medium potatoes (Yukon gold or red work best)

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano or thyme

  • ½ teaspoon paprika

  • Salt & black pepper, to taste

  • Optional: fresh rosemary or parsley

  • Optional topping: lemon zest or feta cheese


👩‍🍳 Instructions

  1. Preheat Oven
    Preheat to 220°C (425°F). Line a sheet pan with parchment paper.

  2. Prepare Potatoes
    Wash potatoes well.
    Carefully score each potato with shallow cuts (don’t cut all the way through).

  3. Season
    In a small bowl, mix olive oil, garlic, oregano, paprika, salt, and pepper.
    Brush generously over and between the cuts.

  4. Bake
    Place potatoes on the sheet pan.
    Bake 35–45 minutes, brushing once halfway through, until crispy and golden.

  5. Finish & Serve
    Sprinkle with fresh herbs, lemon zest, or feta if using.

  • Add chili flakes for heat

  • Serve with tzatziki or garlic yogurt sauce

  • Pair with grilled fish or chicken
