Ingredients

For the Steak & Marinade:

  • 1½ lb (680g) flank steak or skirt steak

  • 3 tbsp olive oil

  • Juice of 2 limes

  • 3 garlic cloves, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • ½ tsp smoked paprika

  • ½ tsp oregano

  • Salt and pepper, to taste

For the Veggies:

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 large onion, sliced

  • 1 tbsp olive oil

  • Salt and pepper, to taste

For Serving:

  • Warm flour or corn tortillas

  • Sour cream

  • Guacamole or sliced avocado

  • Salsa or pico de gallo

  • Fresh cilantro, lime wedges


🔪 Instructions

1. Marinate the Steak

  • In a bowl or zip-top bag, mix all marinade ingredients.

  • Add steak and coat well.

  • Cover and refrigerate for at least 30 minutes (or up to 8 hours for more flavor).

Question: Can I skip marinating?
Answer: You can, but marinating tenderizes the meat and enhances flavor. At least 30 minutes is highly recommended.


2. Cook the Steak

  • Remove steak from marinade and let excess drip off.

  • Heat a cast-iron skillet or grill over high heat.

  • Cook steak for 3–5 minutes per side for medium-rare (adjust to preference).

  • Let it rest 5–10 minutes before slicing thinly against the grain.

Question: Why slice against the grain?
Answer: It shortens muscle fibers, making the steak more tender and easier to chew.


3. Cook the Vegetables

  • In the same skillet, heat 1 tbsp olive oil.

  • Add onions and peppers.

  • Cook 6–8 minutes, stirring occasionally, until softened and lightly charred.

Tip: Don’t overcrowd the pan—cook in batches if needed to avoid steaming the veggies.


4. Assemble Fajitas

  • Heat tortillas in a dry skillet or microwave.

  • Add sliced steak and veggies.

  • Top with desired garnishes (guac, sour cream, salsa, etc.).

  • Squeeze fresh lime on top before serving.


🔥 Optional Add-ins

  • Jalapeño slices for heat

  • Cheese (cotija, cheddar, etc.)

  • Refried beans or black beans on the side


🍽️ Serving Suggestion

Serve on a sizzling cast-iron skillet for that restaurant-style presentation—just heat it in the oven for 10 minutes at 450°F (230°C) and bring it out hot!
