🔪 Instructions
1. Marinate the Steak
-
In a bowl or zip-top bag, mix all marinade ingredients.
-
Add steak and coat well.
-
Cover and refrigerate for at least 30 minutes (or up to 8 hours for more flavor).
❓Question: Can I skip marinating?
Answer: You can, but marinating tenderizes the meat and enhances flavor. At least 30 minutes is highly recommended.
2. Cook the Steak
-
Remove steak from marinade and let excess drip off.
-
Heat a cast-iron skillet or grill over high heat.
-
Cook steak for 3–5 minutes per side for medium-rare (adjust to preference).
-
Let it rest 5–10 minutes before slicing thinly against the grain.
❓Question: Why slice against the grain?
Answer: It shortens muscle fibers, making the steak more tender and easier to chew.
3. Cook the Vegetables
-
In the same skillet, heat 1 tbsp olive oil.
-
Add onions and peppers.
-
Cook 6–8 minutes, stirring occasionally, until softened and lightly charred.
❓Tip: Don’t overcrowd the pan—cook in batches if needed to avoid steaming the veggies.
4. Assemble Fajitas
-
Heat tortillas in a dry skillet or microwave.
-
Add sliced steak and veggies.
-
Top with desired garnishes (guac, sour cream, salsa, etc.).
-
Squeeze fresh lime on top before serving.
🔥 Optional Add-ins
-
Jalapeño slices for heat
-
Cheese (cotija, cheddar, etc.)
-
Refried beans or black beans on the side
🍽️ Serving Suggestion
Serve on a sizzling cast-iron skillet for that restaurant-style presentation—just heat it in the oven for 10 minutes at 450°F (230°C) and bring it out hot!
