🔥 Mediterranean Sizzling Steak Fajitas

🧺 Ingredients (Serves 4)

Steak & Marinade

  • 700 g (1½ lb) flank or sirloin steak

  • 3 tbsp extra-virgin olive oil

  • Juice of 1 lemon (Mediterranean swap for lime)

  • 3 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp ground coriander

  • ½ tsp dried oregano

  • ½ tsp sea salt

  • ½ tsp black pepper

Vegetables

  • 2 bell peppers (any colors), sliced

  • 1 large red onion, sliced

  • 1 tbsp olive oil

  • Pinch of salt & pepper

To Serve

  • Whole-wheat tortillas or warm pita

  • Greek yogurt garlic sauce or tzatziki

  • Fresh parsley or cilantro

  • Optional: sliced avocado, crumbled feta, chili flakes


👩‍🍳 Instructions

1️⃣ Marinate the Steak

  1. Whisk olive oil, lemon juice, garlic, cumin, paprika, coriander, oregano, salt, and pepper.

  2. Rub over steak. Marinate 30 minutes–2 hours.


2️⃣ Cook the Steak

  1. Heat a heavy skillet or cast-iron pan over high heat until very hot.

  2. Sear steak 3–4 minutes per side (medium-rare to medium).

  3. Transfer to a plate, cover loosely, rest 5–10 minutes.

  4. Slice thinly against the grain.


3️⃣ Sauté the Veggies

  1. In the same hot skillet, add olive oil.

  2. Add peppers and onion.

  3. Cook 5–7 minutes until softened with charred edges. Season lightly.


4️⃣ Sizzle & Serve

  1. Return sliced steak to the skillet with vegetables.

  2. Toss for 30–60 seconds until sizzling hot.

  • Spoon into warm whole-wheat tortillas or pita

  • Top with Greek yogurt sauce, herbs, and feta
