🛒 Ingredients

1 sheet puff pastry, thawed

2 tbsp extra-virgin olive oil

1 small onion or shallot, finely chopped

2 cloves garlic, minced

200 g (7 oz) fresh spinach, chopped

½ tsp dried oregano or dill

¼ tsp black pepper

Pinch of nutmeg (optional)

Salt to taste

¾ cup feta cheese, crumbled

½ cup shredded mozzarella or kasseri
-
1 egg, beaten (for egg wash)

Sesame or nigella seeds (optional)
🔪 Instructions
1. Prepare Filling

Heat olive oil in a pan over medium heat.

Sauté onion until soft; add garlic.

Add spinach and cook until wilted and moisture evaporates.

Season with oregano, pepper, nutmeg, and salt.

Remove from heat; cool slightly.

Mix in feta and mozzarella.
2. Prepare Pastry

Preheat oven to 200°C (400°F).

Roll out puff pastry slightly and cut into 12 equal squares.
3. Fill & Shape

Place a spoonful of spinach-cheese filling in the center of each square.

Fold corners inward slightly or leave open for a rustic look.
4. Brush & Bake

Brush pastry edges with beaten egg.

Sprinkle with seeds if using.
