Mediterranean Street Corn Chicken Rice Bowl 🌽🍗
Inspired by street corn flavors with a fresh Mediterranean twist.
Ingredients
Chicken

500 g (1 lb) chicken breast, diced

2 tbsp olive oil

1 tsp paprika

1 tsp ground cumin

½ tsp garlic powder

½ tsp dried oregano

Salt & black pepper to taste

Juice of ½ lemon
Rice

1½ cups cooked rice (basmati, jasmine, or brown)
Mediterranean Street Corn

2 cups corn kernels (fresh, frozen, or grilled)

1 tbsp olive oil
-
½ tsp smoked paprika
-
½ tsp chili flakes (optional)

Salt to taste

2 tbsp Greek yogurt
-
1 tbsp tahini
-
1 tbsp lemon juice
-
2 tbsp crumbled feta (or cotija-style alternative)

2 tbsp fresh parsley or cilantro, chopped

Instructions
1. Cook the Chicken
Mix olive oil, spices, salt, pepper, and lemon juice. Sauté or grill chicken over medium-high heat 6–8 minutes until golden and cooked through. Set aside.
2. Prepare the Corn
Heat olive oil in a skillet. Add corn and cook 5–7 minutes until lightly charred. Season with smoked paprika, chili flakes, and salt.
Turn off heat and stir in Greek yogurt, tahini, lemon juice, feta, and herbs until creamy.
3. Assemble the Bowls
Add warm rice to bowls. Top with chicken, creamy street corn, and fresh toppings. Finish with extra herbs and a squeeze of lemon.
