  • 2 small low-carb tortillas or light flour tortillas

  • Olive oil spray

  • 3 oz lean ground beef (96%) or ground chicken

  • 1 tsp taco seasoning (low-sodium)

  • ¼ cup fat-free refried beans

Sauce

  • 2 tbsp enchilada sauce or mild taco sauce

Cheese

  • ¼ cup reduced-fat shredded Mexican blend or mozzarella

Toppings

  • 1 tbsp diced tomatoes

  • 1 tbsp sliced black olives

🍳 Instructions

  1. Cook the protein
