4 boneless chicken breasts (or thighs)

1½ cups fresh pineapple chunks

1 red bell pepper, sliced

1 small red onion, sliced

3 cloves garlic, minced

¼ cup teriyaki sauce (low-sodium)

1 tbsp olive oil

1 tbsp soy sauce or tamari

1 tbsp honey (optional)

1 tsp fresh ginger, grated

Salt & black pepper to taste

Fresh parsley or basil, chopped (for garnish)

🔥 Oven Method

Preheat oven to 200°C / 400°F.

Lay out 4 large sheets of foil.

Place chicken in the center of each foil.

Top with pineapple, bell pepper, onion, and garlic.

In a bowl, mix teriyaki sauce, olive oil, soy sauce, honey, and ginger.

Spoon sauce evenly over each packet.

Seal foil tightly.
