🍍 Teriyaki Chicken & Pineapple Foil Packets (Mediterranean Style)

🛒 Ingredients

  • 4 boneless chicken breasts (or thighs)

  • 1½ cups fresh pineapple chunks

  • 1 red bell pepper, sliced

  • 1 small red onion, sliced

  • 3 cloves garlic, minced

  • ¼ cup teriyaki sauce (low-sodium)

  • 1 tbsp olive oil

  • 1 tbsp soy sauce or tamari

  • 1 tbsp honey (optional)

  • 1 tsp fresh ginger, grated

  • Salt & black pepper to taste

  • Fresh parsley or basil, chopped (for garnish)


👩‍🍳 Instructions

🔥 Oven Method

  1. Preheat oven to 200°C / 400°F.

  2. Lay out 4 large sheets of foil.

  3. Place chicken in the center of each foil.

  4. Top with pineapple, bell pepper, onion, and garlic.

  5. In a bowl, mix teriyaki sauce, olive oil, soy sauce, honey, and ginger.

  6. Spoon sauce evenly over each packet.

  7. Seal foil tightly.

  8. Bake 20–25 minutes, until chicken is cooked through.


🔥 Grill Method

  • Grill packets over medium heat 18–22 minutes, turning once.


🌿 Mediterranean Touch

  • Add zucchini or cherry tomatoes

  • Finish with lemon zest

  • Use fresh herbs instead of sesame seeds
