Texas Trash Dip is a bold, crowd-pleasing classic—reimagined with a Mediterranean balance. This version keeps the creamy, cheesy comfort you love while using olive oil, Greek yogurt, herbs, beans, and lighter cheese. It’s rich yet fresher, perfect for parties, game nights, or mezze-style sharing.


🛒 Ingredients (Serves 6–8)

Base

  • 1 tbsp extra-virgin olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

Creamy Layer

  • 1 cup Greek yogurt (full-fat or low-fat)

  • ½ cup cream cheese, softened

  • 1 cup shredded mozzarella or Monterey Jack

  • ¼ cup crumbled feta (optional Mediterranean touch)

Flavor & Texture

  • 1 cup cooked black beans or chickpeas, rinsed

  • ½ cup corn kernels (optional)

  • 1 cup cherry tomatoes, finely chopped

  • 1 small green chili or jalapeño, minced (optional)

  • 1 tsp smoked paprika

  • ½ tsp dried oregano

👩‍🍳 Instructions

1️⃣ Sauté the Aromatics

Heat olive oil in a skillet over medium heat.
Add onion and sauté 2–3 minutes until soft.
Add garlic and cook 30 seconds until fragrant. Remove from heat.

2️⃣ Mix the Dip

In a bowl, combine Greek yogurt, cream cheese, mozzarella, feta, paprika, cumin, oregano, salt, and pepper.
Stir in sautéed onion & garlic, beans, corn, tomatoes, and chili.

3️⃣ Bake

Preheat oven to 190°C (375°F).
Transfer mixture to a lightly greased baking dish.
Top with crushed chips.

Bake uncovered for 20–25 minutes until hot and bubbly.

4️⃣ Finish

Sprinkle with fresh herbs and serve warm.
