Ingredients

  • 12 oz spaghetti (whole wheat or regular)

  • 2 tbsp extra virgin olive oil

  • 1 lb chicken breast, thinly sliced

  • 1 small onion, finely chopped

  • 4 cloves garlic, minced

  • 1 can (14–15 oz) crushed tomatoes

  • ½ tsp dried oregano

  • ½ tsp dried basil

  • ¼ tsp chili flakes (optional)

  • Salt & black pepper, to taste

  • 3 cups fresh spinach

  • 2 tbsp fresh parsley or basil, chopped

  • ¼ cup grated Parmesan or Pecorino Romano (optional)


Instructions

  1. Cook the pasta
    Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve ½ cup pasta water, then drain.

  2. Cook the chicken
    Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until lightly golden and cooked through. Remove and set aside.

  3. Build the sauce
    In the same skillet, add onion and sauté until soft. Stir in garlic and cook for 30 seconds until fragrant.

  4. Simmer the tomatoes
    Add crushed tomatoes, oregano, basil, chili flakes, salt, and pepper. Simmer for 8–10 minutes until slightly thickened.

  5. Add spinach & chicken
    Stir in spinach and let it wilt. Return chicken to the skillet and gently combine.

  6. Toss with spaghetti
    Add cooked spaghetti and a splash of reserved pasta water. Toss until coated and glossy.

  7. Finish & serve
    Remove from heat, drizzle with olive oil, sprinkle with fresh herbs and Parmesan if using.
