Ingredients

  • Lean Ground Turkey Breast 1/2Ib
  • Salt 1/2tsp
  • Black Pepper 1/2tsp
  • Ground Sage 1/3tsp
  • Thyme 1/2tsp
  • Dried Marjoram 1/8tsp
  • Crushed Red Pepper Flakes 1/8tsp
  • Chopped Fresh Spinach Leaves 1cup
  • Large Eggs 8
  • Unsweetened almond breeze milk 1/3cup

Instructions

  1. For baking, heat the oven to 350 degrees.
  2. Take mini muffin containers and drizzle them with olive oil. Set aside the containers.
  3. Add sage, black pepper, thyme, crushed red pepper flakes, salt, and dried marjoram to a mixing bowl.
  4. Mix well.
  5. Marinate the ground turkey with these spices.
  6. Coat it until all spices mix well with the turkey.
  7. Place this marinated turkey in the fridge for 2 to 3 hours.
  8. Grease the nonstick pan with olive oil. Put this pan over a medium flame and heat it.
  9. Add marinated turkey to this pan. Cook it until it’s fully cooked.
  10. Break the turkey with the help of a spoon.
  11. Next, add fresh spinach leaves to this pan.
  12. Cook it for 5-6 minutes until the spinach is soft.
  13. Add eggs, unsweetened almond milk, half a teaspoon of black pepper, and salt to another mixing bowl.
  14. Whisk all ingredients.
  15. Equally, pour this egg mixture into the muffin containers.
  16. Add cooked spinach and turkey to the egg mixture.
  17. Place these muffin containers in a heated microwave oven.
  18. Bake it for 15-20 minutes until soft and brown.
  19. Chill the muffins at normal temperature.
  20. Serve with dips.

Reheating: Reheat the frozen Mini Frittatas in the microwave oven for a minute, or until it’s warmed.
