🌀 Mediterranean Twisted Stuffed Puff Pastry Rolls

⭐ Overview

Golden puff pastry twisted around a savory Mediterranean filling made with feta, spinach, herbs, olives, and sun-dried tomatoes. Crispy on the outside, soft and flavorful inside.


🧾 Ingredients (makes 8–10 twists)

For the pastry

  • 1 sheet puff pastry (thawed in the fridge)

  • 1 egg (for egg wash)

Mediterranean filling

Choose your mix—here’s a classic blend:

  • 1 cup baby spinach, finely chopped

  • ½ cup crumbled feta

  • ¼ cup shredded mozzarella or halloumi

  • 2–3 sun-dried tomatoes, finely chopped

  • 6–8 pitted olives, chopped (Kalamata preferred)

  • 1 small garlic clove, minced

  • 1 tbsp olive oil

  • ½ tsp dried oregano

  • ½ tsp paprika

  • Black pepper to taste

Optional additions

  • 1–2 tbsp chopped basil or parsley

  • A pinch of chili flakes

  • 1–2 tbsp ricotta for extra creaminess


🍳 Instructions

1. Prepare the filling

  1. In a bowl, mix spinach, feta, mozzarella, olives, sun-dried tomatoes, garlic, olive oil, oregano, paprika, and pepper.

  2. Combine well.

    • If too dry → add 1 tbsp olive oil or a spoon of ricotta.

    • If too wet → add a pinch of breadcrumbs.


2. Prepare the puff pastry

  1. Preheat oven to 400°F (200°C).

  2. Lightly flour a surface and lay out the pastry.

  3. Roll gently to even thickness (if needed).

  4. Cut the sheet into rectangles (about 2–3 inches wide and 6–7 inches long).


3. Fill & twist

For each pastry rectangle:

  1. Place a line of filling down the center.

  2. Fold the pastry over lengthwise to enclose the filling.

  3. Seal the edge by pinching or pressing with a fork.

  4. Slice each filled strip in half lengthwise without cutting all the way through at the top.

  5. Twist the two strands around each other so the filling shows through.

(Easier version: Just twist the filled strip without slicing—also delicious.)

  1. Place on a baking tray lined with parchment.


4. Egg wash & bake

  1. Brush each twist with beaten egg.

  2. Bake 18–22 minutes, until deeply golden and puffed.


🍽️ To Serve

  • Drizzle lightly with olive oil after baking.

  • Sprinkle with sesame seeds, za’atar, or chopped herbs.

  • Serve warm with:

    • Yogurt-tahini dip

    • Tzatziki

    • Marinara

    • Roasted pepper dip (muhammara)
