In a bowl, whisk eggs with salt, pepper, paprika, and oregano. -
Add vegetables
Stir in cabbage, carrot, onion, bell pepper, garlic, and herbs. Mix well. -
Bind the batter
Add flour or breadcrumbs a little at a time until the mixture is thick enough to shape. -
Shape the fritters
Scoop and shape into small rolls or patties. -
Fry until golden
Heat olive oil in a skillet over medium heat. Fry fritters 2–3 minutes per side until crisp and golden. -
