📝 Ingredients (Serves 4 – makes 8–10 fritters)

  • 3 large eggs

  • 1 cup finely shredded cabbage

  • 1 medium carrot, grated

  • ½ cup onion, finely chopped

  • ½ cup bell pepper, finely chopped

  • 2 tbsp fresh parsley or cilantro, chopped

  • 1 clove garlic, minced

  • ½ tsp paprika

  • ½ tsp dried oregano

  • Salt & black pepper, to taste

  • 3–4 tbsp all-purpose flour or breadcrumbs

  • Extra-virgin olive oil, for frying

  1. Prepare the mixture
    In a bowl, whisk eggs with salt, pepper, paprika, and oregano.

  2. Add vegetables
    Stir in cabbage, carrot, onion, bell pepper, garlic, and herbs. Mix well.

  3. Bind the batter
    Add flour or breadcrumbs a little at a time until the mixture is thick enough to shape.

  4. Shape the fritters
    Scoop and shape into small rolls or patties.

  5. Fry until golden
    Heat olive oil in a skillet over medium heat. Fry fritters 2–3 minutes per side until crisp and golden.

  6. Drain & serve
    Remove and drain on paper towels. Serve hot.
