✨ Mediterranean Walking Taco Casserole

📝 Ingredients (Serves 4–6)
For the Meat Layer

500g ground turkey or chicken (or lean beef)

1 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced
-
1 cup cooked black beans or chickpeas
-
1 cup diced tomatoes (fresh or canned)

Mediterranean Taco Spice Mix:

1 tsp paprika
-
1 tsp cumin
-
1 tsp dried oregano
-
½ tsp coriander
-
½ tsp chili flakes
-
½ tsp salt
-
¼ tsp black pepper

For Layering
-
2 cups crushed whole-grain pita chips or baked tortilla chips

1½ cups grated cheese (mozzarella + cheddar OR halloumi + mozzarella for a Mediterranean twist)

½ cup Greek yogurt (instead of sour cream)
-
½ cup chopped tomatoes
-
½ cup chopped cucumbers
-
¼ cup sliced olives
-
¼ cup fresh parsley or cilantro
-
Optional: pickled onions, jalapeños, avocado
👩🍳 Instructions
1. Cook the meat mixture

Heat olive oil in a skillet.

Add onion and sauté 3–4 minutes.

Add garlic and bell pepper; cook 2–3 minutes.

Add ground turkey/chicken. Break it apart and cook until browned.

Stir in tomatoes, beans/chickpeas, and the Mediterranean spice mix.

Simmer 5–7 minutes until thick.
2. Build the casserole

Preheat oven to 190°C (375°F).

In a casserole dish, sprinkle ½ of the crushed pita/tortilla chips.

Add the entire meat mixture on top.

Sprinkle remaining chips.
-
Top with shredded cheese.
3. Bake

Bake for 12–15 minutes until cheese is melted and bubbly.
4. Add fresh Mediterranean toppings
After baking, add:

Dollops of Greek yogurt

Olives

Parsley/cilantro
