1 cup cooked chickpeas (drained & rinsed)

1 cup canned diced tomatoes, drained

1 cup crushed corn tortilla chips

1½ cups shredded cheese (cheddar, mozzarella, or a blend)
Fresh Toppings (After Baking)

Chopped lettuce

Diced tomatoes

Sliced olives

Chopped parsley or cilantro
Creamy Yogurt Sauce (Mediterranean Swap)

½ cup Greek yogurt
-
1 tablespoon lemon juice
-
1 tablespoon olive oil

Pinch of salt
👩🍳 Instructions

Preheat oven to 180°C / 350°F. Lightly grease a baking dish.

Heat olive oil in a skillet. Sauté onion until soft, add garlic.

Add ground meat and cook until browned.

Stir in spices, chickpeas, and diced tomatoes. Simmer 3–5 minutes.

Spread meat mixture into the baking dish.

Sprinkle crushed tortilla chips evenly over the top.

Add shredded cheese.

Bake 20–25 minutes, until bubbly and lightly golden.

Cool slightly, then top with lettuce, tomatoes, olives, and herbs.
