Weight Watchers Elote Dip

Ingredients
3 cups fresh corn kernels (about 4 ears) or frozen (thawed and drained)
1/2 cup plain nonfat Greek yogurt
1/4 cup light mayonnaise
1/2 cup crumbled cotija or feta cheese
1 tbsp lime juice (about half a lime)
1 tsp chili powder
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp cumin
1/4 cup chopped cilantro (optional)
Salt and pepper, to taste
Optional: diced jalapeƱos or a dash of hot sauce for extra spice
Instructions
Cook the Corn:

If using fresh corn, grill or sautƩ the kernels until slightly charred. Let them cool.
If using frozen, sautƩ in a dry skillet until warmed through and lightly browned.
Mix the Base:

In a large bowl, combine the Greek yogurt, light mayonnaise, lime juice, chili powder, smoked paprika, garlic powder, and cumin. Mix until smooth.
Combine:

Add the corn, cotija cheese, and cilantro (if using) to the yogurt mixture. Stir to combine.
Season:

Taste and adjust with salt, pepper, or more lime juice as needed.
Serve:

Transfer to a serving bowl and garnish with extra cheese, cilantro, or chili powder.
Serve with tortilla chips, veggie sticks, or as a side dish.
