Zesty Lime Shrimp & Avocado Salad (Mediterranean Style)

For the Shrimp

Lime juice β 1 tbsp
For the Salad

Avocado β 1 large, diced

Cherry tomatoes β 1 cup, halved

Cucumber β 1 medium, diced

Red onion β ΒΌ cup finely chopped

Fresh cilantro or parsley β 2β3 tbsp chopped

Mixed greens or romaine β 2 cups (optional)
For the Zesty Lime Dressing

Olive oil β 2 tbsp
-
Lime juice β 3 tbsp (fresh)
-
Honey β 1 tsp (optional)

Dijon mustard β Β½ tsp

Garlic β 1 small clove, minced

Salt & pepper β to taste

Chili flakes β a pinch (optional)

1. Cook the Shrimp

Heat olive oil in a pan over medium heat.

Add garlic and sautΓ© for 20 seconds.

Add shrimp, paprika, lime zest, salt, and pepper.

Cook 2β3 minutes per side until pink and opaque.

Squeeze 1 tbsp lime juice on top and remove from heat.

Set aside to cool slightly.
2. Prepare the Salad
In a large bowl add:

Avocado

Cherry tomatoes

Cucumber

Red onion

Fresh cilantro/parsley

Mixed greens (if using)
3. Make the Dressing
Whisk together:

Olive oil

Lime juice

Dijon

Honey

Garlic

Salt, pepper, chili flakes
4. Assemble

Add cooked shrimp to the salad.
