Ingredients
🥬 Salad:
2 cups shredded cabbage (green or Napa)
½ cucumber, thinly sliced
½ red bell pepper, thinly sliced
2 green onions, chopped
1 tbsp fresh dill or parsley, chopped
Optional: 1 small tomato, diced (adds Mediterranean flavor)
🍋 Dressing:
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice (or apple cider vinegar)
½ tsp Dijon mustard (optional for tang)
¼ tsp black pepper
¼ tsp sea salt (or to taste)
Optional: ¼ tsp dried oregano or za’atar for authentic Mediterranean aroma
Instructions
Prepare the vegetables:
Shred the cabbage, slice the cucumber and bell pepper, and chop the green onions.
Add them all to a large mixing bowl.
Make the dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, mustard, black pepper, and salt until emulsified.
Toss and serve:
Pour the dressing over the veggies.
Add chopped herbs (dill or parsley) and toss everything well to coat evenly.
Let it sit for 5–10 minutes before serving for best flavor.
