🍯 Mediterranean Creamy Yogurt Biscuit Parfait

🧁 Ingredients
For the Cream Layer:

2 cups Greek yogurt (plain or vanilla) 
- 
1 cup milk 
- 
3 tablespoons honey (or date syrup) 
- 
2 tablespoons cornstarch (or 2 egg yolks for a richer version) 
- 
1 teaspoon pure vanilla extract 
- 
Zest of ½ lemon 
For the Crumb Layer:
- 
200 g (about 7 oz) tea biscuits, digestive biscuits, or whole-grain cookies, crushed 
- 
½ cup finely chopped nuts (almonds, walnuts, or pistachios) 
- 
2 tablespoons olive oil or melted butter 
For Garnish:
- 
A sprinkle of shredded coconut or crushed nuts 
- 
Optional: drizzle of honey or a few berries 
🥣 Instructions
- 
Make the Cream Base: - 
In a saucepan, whisk together milk, honey, and cornstarch (or egg yolks). 
- 
Cook over medium heat, stirring constantly, until it begins to thicken (about 5–7 minutes). 
- 
Remove from heat and let it cool slightly. 
- 
Stir in Greek yogurt, vanilla, and lemon zest until smooth and creamy.

Prepare the Crumb Mixture: - 
In a bowl, mix crushed biscuits, nuts, and olive oil or melted butter until well combined. 
 
-

Assemble the Parfaits: - 
In small glasses, layer biscuit crumbs, then cream, then repeat the layers (about 2 layers of each). 
- 
Top with remaining crumbs, a drizzle of honey, and a sprinkle of coconut or nuts.

Chill: - 
Refrigerate for at least 1 hour before serving to let the flavors blend and the cream set.

You can add a spoonful of mascarpone or labneh for extra richness. 
- 
Use whole-grain biscuits or oat cookies to keep it more Mediterranean and fiber-rich.
