🥔 Quick Mediterranean Baked Potato (Crispy & Fluffy)
Ingredients
- 
2 medium russet or yellow potatoes (scrubbed clean) 
- 
1 tablespoon extra virgin olive oil 
- 
½ teaspoon sea salt 
- 
¼ teaspoon black pepper 
- 
Optional herbs & toppings: - 
Dried oregano or thyme 
- 
Garlic powder or smoked paprika 
- 
Chopped fresh parsley, tomatoes, olives, or feta cheese for topping 
 
- 
Instructions
1. Prep the potatoes
- 
Scrub the potatoes and pat them dry. 
- 
Using a fork, poke holes all over each potato (6–8 times) to allow steam to escape. 
2. Microwave (the fast part)
- 
Place the potatoes on a microwave-safe plate. 
- 
Microwave on high for 5–7 minutes, flipping halfway through. - 
(For larger potatoes, go up to 8–10 minutes.)

They’re done when they’re soft when squeezed gently. 
3. Crisp them up
Option A – Oven finish:
- 
Preheat the oven to 450°F (230°C). 
- 
Brush potatoes lightly with olive oil, sprinkle with salt, pepper, and herbs. 
- 
Place directly on the oven rack or baking sheet. 
- 
Bake for 10–12 minutes, until the skin is crispy and golden. 
Option B – Air fryer finish:
- 
Brush with olive oil, season, and air fry at 400°F (200°C) for 8–10 minutes. 
4. Serve Mediterranean-style
Slice open and fluff the inside with a fork.
Top with your choice of:
- 
A drizzle of extra virgin olive oil 
- 
Chopped tomatoes, cucumber, olives, and parsley (like a mini Greek salad) 
- 
Crumbled feta or a spoon of Greek yogurt instead of butter 
- 
A sprinkle of oregano or za’atar
