🥔 Quick Mediterranean Baked Potato (Crispy & Fluffy)

Ingredients

  • 2 medium russet or yellow potatoes (scrubbed clean)

  • 1 tablespoon extra virgin olive oil

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper

  • Optional herbs & toppings:

    • Dried oregano or thyme

    • Garlic powder or smoked paprika

    • Chopped fresh parsley, tomatoes, olives, or feta cheese for topping


Instructions

1. Prep the potatoes

  • Scrub the potatoes and pat them dry.

  • Using a fork, poke holes all over each potato (6–8 times) to allow steam to escape.


2. Microwave (the fast part)

  • Place the potatoes on a microwave-safe plate.

  • Microwave on high for 5–7 minutes, flipping halfway through.

    • (For larger potatoes, go up to 8–10 minutes.)

  • They’re done when they’re soft when squeezed gently.


3. Crisp them up

Option A – Oven finish:

  • Preheat the oven to 450°F (230°C).

  • Brush potatoes lightly with olive oil, sprinkle with salt, pepper, and herbs.

  • Place directly on the oven rack or baking sheet.

  • Bake for 10–12 minutes, until the skin is crispy and golden.

Option B – Air fryer finish:

  • Brush with olive oil, season, and air fry at 400°F (200°C) for 8–10 minutes.


4. Serve Mediterranean-style

Slice open and fluff the inside with a fork.
Top with your choice of:

  • A drizzle of extra virgin olive oil

  • Chopped tomatoes, cucumber, olives, and parsley (like a mini Greek salad)

  • Crumbled feta or a spoon of Greek yogurt instead of butter

  • A sprinkle of oregano or za’atar
