Almond Joy Cookies Recipe
Almond Joy Cookies Ingredients:
- 1 cup unsweetened shredded coconut
- 1/4 cup unsweetened cocoa powder
- 1/4 cup Stevia (or preferred sugar substitute)
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1/4 cup mini semi-sweet chocolate chips
- 24 whole almonds
Almond Joy Cookies Directions:
- Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the shredded coconut, cocoa powder, and Stevia. Mix well.
- Add the egg whites and vanilla extract to the bowl. Stir until the mixture forms a dough.
- Gently fold in the mini semi-sweet chocolate chips.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet and flatten each slightly with the back of a spoon.
- Press one whole almond into the center of each cookie.
- Bake for 12-15 minutes, or until the cookies are set and lightly browned at the edges.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
