🥗 Mediterranean Cabbage & Cucumber Salad

Ingredients

🥬 Salad:

  • 2 cups shredded cabbage (green or Napa)

  • ½ cucumber, thinly sliced

  • ½ red bell pepper, thinly sliced

  • 2 green onions, chopped

  • 1 tbsp fresh dill or parsley, chopped

  • Optional: 1 small tomato, diced (adds Mediterranean flavor)

🍋 Dressing:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice (or apple cider vinegar)

  • ½ tsp Dijon mustard (optional for tang)

  • ¼ tsp black pepper

  • ¼ tsp sea salt (or to taste)

  • Optional: ¼ tsp dried oregano or za’atar for authentic Mediterranean aroma


Instructions

  1. Prepare the vegetables:

    • Shred the cabbage, slice the cucumber and bell pepper, and chop the green onions.

    • Add them all to a large mixing bowl.

  2. Make the dressing:

    • In a small bowl or jar, whisk together olive oil, lemon juice, mustard, black pepper, and salt until emulsified.

  3. Toss and serve:

    • Pour the dressing over the veggies.

    • Add chopped herbs (dill or parsley) and toss everything well to coat evenly.

    • Let it sit for 5–10 minutes before serving for best flavor.
