🥬 Mediterranean Cabbage Fritters (or Baked Cabbage Pie)

Ingredients

  • 500 g cabbage, finely shredded

  • 2 medium onions, finely chopped

  • 3 cloves garlic, minced

  • 3 eggs

  • 4 tbsp flour (about 60 g; you can use chickpea flour or whole wheat for a healthier version)

  • 1 tsp salt (8 g)

  • ½ tsp black pepper

  • ½ tsp paprika (optional, for color and warmth)

  • 2 tbsp olive oil (plus more for frying or brushing if baking)

  • Optional: 2 tbsp chopped parsley or dill

  • Optional: 50 g (½ cup) crumbled feta cheese


Instructions

🥣 1. Prepare the Cabbage Mixture

  1. In a large bowl, combine the shredded cabbage, chopped onions, and minced garlic.

  2. Sprinkle with a bit of salt and massage with your hands for 1–2 minutes — this softens the cabbage.

  3. Add eggs, flour, black pepper, paprika, herbs (if using), and feta (optional).

  4. Mix until everything is evenly coated and forms a thick, slightly sticky mixture.


🍳 2. Frying Option (Crispy Version)

  1. Heat 2 tbsp olive oil in a large skillet over medium heat.

  2. Drop spoonfuls of the mixture into the pan and flatten slightly with a spatula.

  3. Fry for 3–4 minutes per side until golden brown and crisp.

  4. Drain on paper towels and serve warm.


🔥 3. Baking Option (Healthier Version)

  1. Preheat oven to 200°C / 400°F.

  2. Line a baking dish (about 20×30 cm or 8×12 in) with parchment paper or grease lightly.

  3. Spread the cabbage mixture evenly in the dish.

  4. Brush the top with a little olive oil.

  5. Bake for 25–30 minutes until golden and set.

  6. Let cool slightly, then slice into squares.


🍋 Serving Suggestions

  • Serve with a Mediterranean yogurt-garlic dip (Greek yogurt, lemon juice, olive oil, and dill).

  • Add a side of tomato and cucumber salad with olive oil and oregano.

  • Perfect as a light lunch, meze, or vegetarian dinner.
