Ingredients:

  • 1 box (15.25 oz) pistachio cake mix
  • 1 can (20 oz) crushed pineapple (undrained)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chopped pistachios (optional, for extra crunch)
  • 1 cup whipped topping (optional, for frosting)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix Ingredients: In a large bowl, combine the pistachio cake mix, undrained crushed pineapple, eggs, and vegetable oil. Mix until well combined. If you’re using chopped pistachios, fold them in at this stage.
  3. Pour Batter: Pour the batter into the prepared baking pan and spread it evenly.
  4. Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and Frost: Allow the cake to cool completely in the pan on a wire rack. Once cooled, you can frost it with whipped topping if desired.
  6. Serve: Cut into squares and serve.
