🥘 Mediterranean Swiss Chicken Casserole

Creamy, cheesy, herby baked chicken layered with vegetables and topped with a golden Swiss-cheese crust.


🛒 Ingredients (Serves 4)

Chicken Layer

  • 3–4 chicken breasts (or 6 thighs)

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp thyme

  • Salt & pepper

Vegetable Layer

  • 1 cup mushrooms, sliced

  • 1 medium zucchini, sliced

  • 1 small onion, sliced

  • 1 cup baby spinach

  • 1–2 tomatoes, sliced (optional)

Mediterranean “Cream Sauce” (healthy version)

  • 1 cup Greek yogurt

  • ½ cup chicken broth

  • 2 garlic cloves, minced

  • 1 tbsp Dijon mustard (optional but great)

  • 1 tsp dried basil or oregano

  • Salt & pepper

Cheese Topping

  • 1–1½ cups shredded Swiss cheese
    (or a mix of Swiss + mozzarella + a little feta)


🍳 Instructions

1. Season & Sear the Chicken

  1. Preheat oven to 190°C (375°F).

  2. Rub chicken with olive oil, paprika, garlic powder, oregano, thyme, salt, pepper.

  3. Sear in a skillet 2–3 minutes per side until lightly golden (not fully cooked).


2. Prepare the Vegetables

In the same pan, briefly sauté:

  • mushrooms

  • onion

  • zucchini

Cook 3–4 minutes until lightly softened.
Add spinach and let it wilt.


3. Make the Mediterranean Cream Sauce

Whisk together:

  • Greek yogurt

  • chicken broth

  • garlic

  • Dijon

  • herbs

  • salt & pepper

This creates a creamy but light Mediterranean-style sauce without flour or heavy cream.


4. Assemble the Casserole

In a baking dish:

  1. Spread the sautéed vegetables on the bottom.

  2. Lay the chicken pieces over the vegetables.

  3. Pour the Greek yogurt cream sauce evenly over everything.

  4. Top with Swiss cheese (and optional feta).


5. Bake

Bake 30–35 minutes until:

  • chicken is fully cooked

  • sauce is bubbling

  • cheese is melted and golden

(Optional) Broil 2–3 minutes for a golden top.


🍽️ Serve With

  • Lemon-herb rice

  • Orzo

  • Roasted potatoes

  • A Mediterranean salad (cucumber, tomato, olives, feta)


🌿 Optional Mediterranean Upgrades

  • Add sun-dried tomatoes under the cheese

  • Sprinkle za’atar or sumac on top

  • Add fresh parsley or basil before serving

  • Replace some Swiss cheese with kasseri or halloumi for a Greek twist
