🍠 Caramelized Sweet Potatoes with Maple, Feta & Crunchy Walnuts

Mediterranean Full Recipe

✨ Ingredients (Serves 3–4)

  • 2 large sweet potatoes, peeled & cubed

  • 2 tbsp olive oil

  • 2–3 tbsp pure maple syrup

  • ½ tsp cinnamon

  • ¼ tsp smoked paprika (optional but delicious)

  • Salt & black pepper, to taste

  • ½ cup walnuts, toasted

  • ½ cup feta cheese, crumbled

  • 1–2 tbsp fresh parsley or mint, chopped

  • Optional Mediterranean touches:

    • Drizzle of balsamic glaze

    • Sprinkle of sesame or sumac


🧑‍🍳 Instructions

1. Prep the sweet potatoes

  • Preheat oven to 200°C (400°F).

  • Toss sweet potato cubes with olive oil, salt, pepper, cinnamon, and paprika.

2. Roast

  • Spread on a baking sheet.

  • Roast 25–30 minutes, flipping halfway, until lightly browned and tender.

3. Caramelize

  • Remove from oven and drizzle maple syrup over warm sweet potatoes.

  • Gently toss so the heat caramelizes the syrup.

4. Toast the walnuts

  • In a dry pan, toast walnuts for 2–3 minutes, just until fragrant.

5. Assemble

  • Transfer sweet potatoes to a serving dish.

  • Top with:
    ✔ Crumbled feta
    ✔ Toasted walnuts
    ✔ Fresh herbs

  • Add a drizzle of balsamic glaze if you like extra Mediterranean richness.
