Miso Glazed Cod

Ingredients:
  • 4 cod fillets (about 6 oz each)
  • 2 tbsp white miso paste
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey (or a sugar substitute)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp green onions, chopped (for garnish)
  • 1 tsp sesame seeds (optional, for garnish)
Instructions:
  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Make the Miso Glaze: In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger until smooth and well combined.
  • Prepare the Cod: Place the cod fillets on the prepared baking sheet. Brush the fillets with the miso glaze on both sides.
  • Bake the Cod: Bake the cod in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.
  • Serve: Garnish the cod with chopped green onions and sesame seeds (optional). Serve with steamed vegetables, rice, or a salad.
