🍠 Caramelized Sweet Potatoes with Maple, Feta & Crunchy Walnuts

Style: Mediterranean-inspired, nourishing, naturally sweet


Ingredients

Main Ingredients

  • 3 medium sweet potatoes, peeled and cut into cubes or thick slices

  • 2 tbsp olive oil

  • 2 tbsp maple syrup (or honey)

  • ½ tsp cinnamon

  • ½ tsp smoked paprika (optional but recommended)

  • Salt & black pepper to taste

Mediterranean Toppings

  • ½ cup crumbled feta cheese

  • ¼ cup walnuts, lightly toasted and chopped

  • 1–2 tbsp fresh parsley or mint (optional)

  • Extra drizzle of olive oil or maple syrup (optional)


🍳 Instructions

1. Preheat

Preheat oven to 400°F (200°C).
Line a baking tray with parchment paper.


2. Prepare the Sweet Potatoes

  1. Add cubed sweet potatoes to a bowl.

  2. Toss with:

    • olive oil

    • maple syrup/honey

    • cinnamon

    • smoked paprika

    • salt

    • pepper

  3. Mix well until everything is coated.


3. Roast Until Caramelized

Spread sweet potatoes evenly on the tray.
Roast 25–30 minutes, flipping halfway, until:
✔ edges are caramelized
✔ centers are soft
✔ color is golden and sticky


4. Add the Mediterranean Toppings

Transfer sweet potatoes to a serving dish and top with:

  • crumbled feta

  • toasted walnuts

Add optional:

  • fresh parsley or mint

  • an extra drizzle of maple or olive oil


🌿 Serve

Perfect as a side dish with:

  • Grilled chicken

  • Salmon

  • Halloumi

  • Lentils

  • Mediterranean rice bowls

Great warm or at room temperature!


💡 Variations

  • Add pomegranate seeds

  • Add a squeeze of lemon for freshness

  • Add chili flakes for heat

  • Add a spoon of Greek yogurt on the side
