🍎 Apple Salad with Honeycrisp Apples, Celery, Grapes, Pecans & Dried Cranberries

Salad

2 Honeycrisp apples, diced or thinly sliced

1 cup red or green grapes, halved

2–3 celery stalks, thinly sliced

½ cup pecans, toasted and roughly chopped

¼ cup dried cranberries (unsweetened if possible)

2–3 tbsp fresh parsley or mint, chopped
-
Optional: ¼ cup feta cheese (Mediterranean twist)
Mediterranean Honey-Lemon Dressing

2 tbsp extra-virgin olive oil
-
1½ tbsp honey
-
1 tbsp fresh lemon juice (or apple cider vinegar)
-
1 tsp Dijon mustard
-
¼ tsp salt
-
⅛ tsp black pepper
-
Optional: ½ tsp poppy seeds
🔥 Instructions
1. Prep the fruit & veggies

Slice the apples (toss with a little lemon juice to prevent browning).

Halve the grapes.

Thinly slice celery.
-
Chop parsley/mint.
-
Toast pecans in a dry pan for 2–3 minutes (optional but enhances taste).
2. Make the dressing
In a small bowl or jar, whisk together:

Olive oil

Honey

Lemon juice
-
Dijon mustard
-
Salt & pepper
Shake until smooth and creamy.
3. Assemble the salad
In a large bowl, combine:

Grapes

Celery

Pecans

Cranberries

Parsley/mint
Pour the dressing on top and toss gently.
4. Serve
