🥗 Mediterranean Ground Beef & Cabbage Stir Fry

🧅 Ingredients (4 servings)

1 lb (450g) lean ground beef (or ground turkey/chicken)
Vegetables

3 cups green cabbage, thinly shredded

1 medium onion, sliced

1 red bell pepper, julienned
-
2 cups baby spinach
-
2 cloves garlic, minced
-
1 small zucchini, sliced into half-moons (optional)
Mediterranean Flavor Base

3 tbsp olive oil
-
1 tsp smoked paprika
-
1 tsp dried oregano
-
½ tsp cumin
-
½ tsp coriander
-
½ tsp thyme
-
Salt & black pepper to taste
Finishing Ingredients

½ cup cherry tomatoes, halved
-
2 tbsp lemon juice
-
¼ cup crumbled feta cheese
-
Fresh parsley, chopped
-
Optional: olives, pine nuts, or chili flakes
🍳 Instructions
1. Sauté the aromatics
Heat olive oil in a large pan over medium-high heat.
Add onion and garlic; cook until softened.
2. Brown the ground beef
Add the beef, breaking it up.
Cook until browned and no longer pink.
Season lightly with salt and pepper.
3. Add Mediterranean spices
Stir in:
Paprika, oregano, thyme, cumin, coriander.
Cook 1–2 minutes to bloom the spices.
4. Add vegetables
Add:

Cabbage

Bell pepper
-
Zucchini (optional)
Cook 5–7 minutes until softened.
5. Add spinach & lemon
Stir in spinach and cook until wilted.
Add lemon juice to brighten the flavors.
6. Finish with Mediterranean toppings
Remove from heat.
Stir in cherry tomatoes.
Top with feta and parsley before serving.
Optional add-ons: olives, pine nuts, chili flakes.
