🍋 Mediterranean Honey-Lime Chicken & Avocado Rice Stack

This dish layers zesty honey-lime chicken, creamy avocado, and fluffy Mediterranean herb rice, stacked beautifully like a restaurant-style tower.
🥗 Ingredients (2–3 servings)
For the Chicken
2 chicken breasts or 4 chicken tenders, diced
2 tbsp olive oil
2 tbsp honey
Zest of 1 lime
Juice of 1 lime
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp dried oregano
½ tsp cumin
Salt & black pepper
Optional: a pinch of Aleppo pepper or chili flakes
For the Mediterranean Herb Rice
1 cup cooked basmati, jasmine, or brown rice
1 tbsp olive oil
1 tbsp lemon juice
1–2 tbsp chopped parsley
1 tbsp chopped mint (optional but amazing)
2 tbsp finely diced cucumber
Salt & pepper to taste
For the Avocado Layer
1 large ripe avocado, diced
1 tbsp lime juice
Pinch of salt
1 tbsp finely diced red onion
1 tbsp chopped tomato (optional)
To Serve
Extra lime wedges
Drizzle of olive oil
Cherry tomatoes
Crumbled feta (Mediterranean twist!)
Extra parsley or mint
🍳 Instructions
1. Marinate the Chicken
In a bowl, mix together:
Honey, lime zest, lime juice, olive oil, garlic, paprika, oregano, cumin, salt, pepper.
Add the diced chicken.
Marinate 15–30 minutes (or overnight).
2. Cook the Chicken
Heat a skillet over medium-high.
Add chicken (with marinade).
Cook 8–10 minutes until caramelized, golden, and cooked through.
Set aside.
3. Prepare the Mediterranean Rice
In a bowl, combine:
Cooked rice + olive oil + lemon juice + parsley + mint + cucumber + salt + pepper.
Fluff with a fork.
4. Prepare the Avocado Layer
Mix diced avocado with lime juice, salt, red onion, and tomato.
Keep it chunky, not mashed.
5. Assemble the Stack
Use a round food mold, ramekin, or small bowl:

2️⃣ Middle layer: Avocado chunks
3️⃣ Top layer: Honey-lime chicken
Press gently, then lift mold straight up.
