Mediterranean Spinach and Feta Crisps

🧀 Mediterranean Spinach & Feta Crisps 

Crispy on the outside, soft and savory inside — these crisps make the perfect snack, appetizer, or side dish!


Ingredients (Makes 10–12 crisps)

For the mixture:

  • 2 cups fresh spinach, finely chopped (or 1 cup cooked, squeezed dry)

  • 1 cup crumbled feta cheese

  • 1 small onion, very finely chopped

  • 1 egg, beaten

  • 2 tbsp olive oil

  • 2–3 tbsp whole wheat breadcrumbs (or oats)

  • 1 clove garlic, minced

  • ½ tsp dried oregano

  • ¼ tsp dried thyme

  • ¼ tsp black pepper

  • Pinch of salt (optional—feta is salty)

For frying or baking:

  • Olive oil spray (for baking)
    or

  • 2–3 tbsp olive oil (for shallow fry)


🥣 Instructions

1. Prepare the spinach

  • If using fresh spinach: sauté it for 2–3 minutes until wilted, then squeeze out ALL moisture.

  • If using frozen spinach: thaw and squeeze dry completely.

2. Make the mixture

In a bowl, combine:
✔ chopped spinach
✔ feta cheese
✔ onion
✔ egg
✔ garlic
✔ olive oil
✔ breadcrumbs
✔ oregano + thyme
✔ pepper

Mix until you get a thick, scoopable batter.
Add a little more breadcrumbs if too wet.


🔥 3. Shape and cook

Option A: Pan-Fried (crispiest)

  1. Heat olive oil in a pan.

  2. Drop spoonfuls of the mixture and flatten lightly.

  3. Cook 3–4 minutes per side until golden brown and crisp.

Option B: Baked (lighter)

  1. Preheat oven to 200°C (400°F).

  2. Line a tray, lightly grease, and spoon the mixture into small disks.

  3. Bake 15–18 minutes, flip halfway, until crisp and golden.


🍋 4. Serve

Pair with:

  • Greek yogurt + lemon dip

  • Tzatziki

  • Garlic yogurt sauce

  • Hummus

Garnish with fresh dill, parsley, or a squeeze of lemon.

  • Add sun-dried tomatoes for extra flavor.

  • Substitute feta with halloumi for a firmer crisp.

  • Add grated zucchini (well squeezed) for variation.
