Moist, flavorful salmon baked with olive oil, garlic, oregano, feta, and tangy sun-dried tomatoes β the perfect Mediterranean dinner!
β Ingredients (Serves 2β3)
For the Salmon

2 salmon fillets (around 150β180g each)

1Β½ tbsp olive oil

1 tbsp lemon juice

2 cloves garlic, minced
-
1 tsp oregano
-
Β½ tsp paprika
-
Β½ tsp black pepper
-
ΒΌβΒ½ tsp salt

1 tsp lemon zest
Mediterranean Topping
-
ΒΌ cup sun-dried tomatoes, chopped
-
ΒΌ cup feta cheese, crumbled
-
2 tbsp fresh parsley, chopped
-
2 tbsp kalamata olives, chopped (optional)

1β2 tbsp sun-dried tomato oil from the jar (optional but adds amazing flavor)
π§ Instructions
1. Preheat Oven

Preheat to 200Β°C (400Β°F).

Line a baking dish with parchment or lightly oil it.
2. Season the Salmon
In a small bowl, mix:
β olive oil
β lemon juice
β lemon zest
β garlic
β oregano
β paprika
β salt & pepper
Brush or rub this mixture all over the salmon fillets.
3. Add Mediterranean Topping
In another bowl, combine:
β sun-dried tomatoes
β feta cheese
β parsley
β olives (optional)
β 1 tbsp sun-dried tomato oil
Spoon generously over each salmon fillet.
4. Bake

Bake for 12β15 minutes, depending on thickness.
