🍗 Savory Garlic Mushroom Chicken with Spinach

Creamy, comforting, and ready in 25 minutes.


🛒 Ingredients (Serves 4)

Chicken

  • 4 chicken breasts OR 6 chicken thighs

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 2 tbsp olive oil

For the Sauce

  • 2 tbsp olive oil (or 1 tbsp butter + 1 tbsp olive oil)

  • 1 medium onion, finely diced

  • 4–5 garlic cloves, minced

  • 250g (8 oz) mushrooms, sliced

  • 1 cup cherry tomatoes or ¼ cup sun-dried tomatoes (Mediterranean boost!)

  • 1 cup fresh spinach

  • ½ cup chicken broth

  • ½ cup cream OR coconut cream

  • ¼ cup grated Parmesan or crumbled feta

  • 1 tsp dried oregano

  • ½ tsp chili flakes (optional)

  • 1 tbsp lemon juice

  • Fresh parsley for garnish


🔪 Instructions

1. Season & Cook Chicken

  1. Pat chicken dry and season with salt, pepper, paprika, and garlic powder.

  2. Heat 2 tbsp olive oil in a large skillet.

  3. Cook chicken 5–6 minutes per side, until golden and cooked through.

  4. Remove and set aside.


2. Make the Mediterranean Garlic Mushroom Sauce

  1. In the same pan add more olive oil if needed.

  2. Sauté onions for 2 minutes.

  3. Add garlic and cook 30 seconds.

  4. Add sliced mushrooms and cook 5 minutes until browned.

  5. Add cherry tomatoes or sun-dried tomatoes.

  6. Pour in chicken broth and simmer 2 minutes.

  7. Reduce heat and stir in cream + Parmesan/feta.

  8. Add dried oregano, chili flakes, and lemon juice.

  9. Add spinach and cook until wilted.


3. Put It All Together

  1. Return the chicken to the pan.

  2. Spoon sauce over the chicken.

  3. Simmer 3–4 minutes to thicken and blend flavors.

  • Use sun-dried tomatoes in olive oil for the best Mediterranean flavor.
