🥘 Crispy Roasted Cauliflower (Mediterranean Style)

Baked – Healthy – Super Flavorful

Ingredients

  • 1 large cauliflower, cut into florets

  • 3 tbsp extra-virgin olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp cumin (optional but amazing)

  • ½ tsp turmeric (optional for color)

  • Salt & black pepper to taste

  • Juice of ½ lemon

  • Fresh parsley for garnish

  • Optional: 2 tbsp grated parmesan OR 2 tbsp tahini for a dairy-free twist


Instructions

  1. Preheat the oven
    Set your oven to 220°C (425°F) — high heat = crispiness.

  2. Prepare the cauliflower
    Wash and fully dry the florets (very important for crisp texture).

  3. Season
    In a large bowl, toss the cauliflower with:

    • olive oil

    • paprika

    • garlic powder

    • oregano

    • cumin

    • turmeric

    • salt & pepper

    • lemon juice

    Make sure everything is coated evenly.

  4. Spread on a baking sheet
    Arrange florets in a single layer — no overlapping!
    (Crowded pans = soggy cauliflower.)

  5. Bake
    Roast for 25–35 minutes, flipping halfway.
    Edges should be deep golden, crispy, and caramelized.

  6. Finish
    Remove from oven and sprinkle with:

    • fresh parsley

    • a squeeze of lemon

    • optional parmesan OR tahini drizzle


Mediterranean Serving Ideas

  • Serve with yogurt garlic dip or tzatziki

  • Add to a mezze platter with olives, hummus, and pita

  • Toss into grain bowls (quinoa, couscous, bulgur)

  • Enjoy as a snack, side, or vegetarian main dish
