🍋✨ Mediterranean Lemon Cheesecake Mousse

✅ Ingredients (4 servings)
For the Mousse
1 cup Greek yogurt (full-fat or 2%)
½ cup cream cheese, softened
¼ cup honey or maple syrup
Zest of 1 large lemon
Juice of 1 large lemon (about 3 tbsp)
1 tsp vanilla extract
½ cup heavy cream, whipped to soft peaks
Pinch of salt
For the Mediterranean Crumble (optional but amazing)
½ cup crushed digestive biscuits OR crushed nuts (walnuts/almonds/pistachios)
1 tbsp melted butter or olive oil
1 tbsp honey
Pinch of cinnamon
Toppings
Fresh berries
Thin lemon slices or zest curls
Mint leaves
Drizzle of honey
👩🍳 Instructions
1. Make the Mediterranean Crumble (optional)
Mix crushed biscuits or nuts with:
melted butter/olive oil
honey
pinch of cinnamon
Spread on a plate and let it set.
2. Prepare the Mousse Base
In a bowl, beat the softened cream cheese until smooth.
Add Greek yogurt, honey, lemon zest, lemon juice, vanilla, and salt.
Whisk until creamy and fully blended.
3. Fold in the Whipped Cream
Add the whipped cream gently using a spatula.
Fold until the mixture becomes fluffy and mousse-like.
Do not overmix.
4. Assemble
You can serve it:
in glasses
in bowls
layered like a parfait
Layer crumble → mousse → crumble → mousse.
5. Chill
Refrigerate for 1–2 hours for the perfect mousse texture.
