½ cup celery, sliced (optional but adds crunch)

½ cup fresh parsley or mint, chopped

⭐ For the Orange Vinaigrette

3 tbsp extra virgin olive oil

3 tbsp fresh orange juice

1 tsp orange zest
-
1 tbsp lemon juice

1 tsp honey or date syrup

1 tsp Dijon mustard

1 small garlic clove, grated

Salt & black pepper to taste

1. Prepare the salad
In a large bowl, combine:

Toss lightly.
2. Make the orange vinaigrette
Whisk together:

Taste → add more orange or lemon if needed.
3. Combine
