🥗 Mediterranean Celery Olive Salad

⭐ Ingredients
Base Salad
4–5 celery stalks, thinly sliced
½ cup green olives, sliced (Castelvetrano or your favorite)
¼ cup black olives, sliced (optional mix for color)
1 small red onion, thinly sliced
½ cup cherry tomatoes, halved (optional but delicious)
¼ cup fresh parsley, chopped
1–2 tbsp fresh dill or mint (optional)
Dressing
3 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tbsp red wine vinegar
1 tsp Dijon mustard
1 small garlic clove, grated
½ tsp dried oregano
Salt & pepper to taste
Optional: pinch of chili flakes
Optional Add-Ins
Feta cubes or crumbles
Capers
Toasted almonds or walnuts
Sliced cucumber
Chickpeas for protein
⭐ Instructions
1. Prepare the vegetables
Slice celery into thin crescents for extra crunch.
Add to a bowl with:
green olives
black olives
red onion
parsley
optional tomatoes, dill/mint
2. Make the dressing
Whisk together:
olive oil
lemon juice
red wine vinegar
Dijon
garlic
oregano
salt & pepper
chili flakes (optional)
3. Combine
Pour dressing over the salad.
Toss until everything is glossy and coated.
4. Finish
Taste and adjust seasoning with:
more lemon
more olives
pinch of salt or pepper
Add feta or nuts if desired.
